
Woodland mushrooms add a earthy and wholesome taste to any dish they grace, so if you add that to a soup, you have a recipe for success!
Mushroom soup is filling, granular and with earthy taste! The best part is it’s basic to make. To make this soup all you need is four ingredients, a mixer and 45 minutes!
Begin by sautéing the shallots in a pan, add the roughly chopped mushrooms and when settled pour over the cream and water. Bring to a simmer and cook for 40 minutes, seasoning liberally with your herbs of choice. Take of the heat and mix the soup to a granular consistency, giving it texture whilst keeping it oxygenated.
Garnish with dill and throw in a few chopped almonds to finish off!
Serves well with Riesling!
